The former Aki's Bakery location in San Jose has been transformed into the bustling home base for My Green Lunch, where CEO Todd Evjenth and his team prepare fresh, healthy school lunches daily for Bay Area students.
The space, which once produced baked goods beloved by the San Jose community, now hums with a different kind of energy — the organized rhythm of a kitchen committed to getting nutritious, locally sourced food to school children across Silicon Valley. The transformation is a fitting metaphor for My Green Lunch's own journey: taking something familiar and reimagining it for the better.
Evjenth founded My Green Lunch in 2012 after becoming alarmed by the quality of food being served at his children's school. A former Silicon Valley high-tech salesman with no culinary background, he taught himself the business of food service and built a company that now serves dozens of Bay Area schools.
"We wanted a space that could grow with us," Evjenth said of the new kitchen. "Aki's Bakery was a beloved part of this community, and we feel a real responsibility to honor that legacy by doing something meaningful here."
The kitchen operates five days a week during the school year, with a team that arrives early each morning to begin preparing the day's menu. Every item is made fresh — no frozen meals, no factory-produced shortcuts. Ingredients are sourced from California farms and local food purveyors, with an emphasis on seasonal produce.
My Green Lunch offers more than 10 daily options across hot, cold, vegetarian, vegan, and gluten-free categories. All meals are 100% nut-free and served in compostable packaging. The company's commitment to sustainability extends from the farm to the lunch table.
